The results show that the composition &#105;&#110; fatty acids is characterized &#098;&#121; the presence of stearic acid and oleic acid, which represent nearly 96% of the total fatty acids &#105;&#110; Pentadesma butter. &#097; comparison of the fat contents of cacao, shea butter (Butyrospermum parkii) and tallow (Pentadesma butyracea) and &#097; comparison of &#102;&#111;&#117;&#114; oilseeds providing cocoa-butter substitutes including shea (Butyrospermum paradoxum), pentadecima (Pentadesma butyraceae), illipe (Shorea spp) and salseed (Shorea robusta). Results showed varying levels of aflatoxin &#119;&#104;&#101;&#110; tested as substrates for its production &#098;&#121; &#116;&#119;&#111; strains of Aspergillus parasiticus.</p>
