Vitamin C, also known as ascorbic acid, is an antioxidant vitamin that is water-soluble. the human body is incapable of making its own vitamin C and needs to obtain it through a diet that includes food rich in vitamin C.

Vitamin C is vital for the formation of collagen, which is a protein that provides structure to muscle, bone, blood vessels and cartilage. Raw vegetables and fruits that are cut should be stored in the refrigerator in an airtight container. Avoid storing or soaking in water as vitamin C gets depleted by dissolving in water.
